Our beef are exclusively bred from the renowned Piedmontese line. We have selectively chosen this Italian American breed because of its natural tenderness and rich flavor. Pied-montese cattle are also naturally lean, in fact, one of the leanest in the world. Piedmontese beef is easier to cut. In spite of remarkably low fat and marbling content, the beef is very juicy and extremely delicious.

Piedmontese beef is low in fat and cholesterol, and high in protein and other necessary vitamins and minerals found only in red meat. A 3.5 oz. serving of our beef has 45mg of cholesterol compared with 70mg in a 3.5 oz. serving of skinless chicken, and 74mg in the same size serving of traditional beef. The statistics on fat are equally impressive. For the same serving size, our beef contains 2.7g of fat compared with 3.08g in chicken and 5.0g in traditional beef. The protein count comes up higher, with 22g in our beef and only 20.35g in traditional beef and 21.39g in chicken. If it's calories you're after, you won't find many of them here.
